Mint, Lemon Balm, and Mango Syrup





Mint, Lemon Balm, and Mango Syrup
2 c water
1 1/2 sugar
Handful of lemon balm
Handful of mint
1/2 c mango 
Bring the water almost to a boil 
Add ingredients 
Simmer 20 minutes 
Let cool and bottle 
Good for two weeks
This one is super tasty! 

Also remember to take the mint off the stem.  Leaving the mint leaf on the stem makes it bitter. 

I like my syrups in plain black tea and plain green teas.

This is so easy.  I don't measure- sorry.  I just toss in a hand full of the herbs.  I wash them in cold water and then put them in the simmering water.



Pull the mint off the stem. A tip from my mom.


Add the mangos- I add them still frozen.


It smells so good!!  


After about 15 minutes when the mangos are getting soft, I mush them a bit to extract more flavor.


Straining is the hardest part...trying not to spill. 


Then put in the fridge for up to 2 weeks.
